The General Manager is responsible for managing all operations at Torch & Crown’s flagship Soho brewery and restaurant. This position directly owns the location’s PnL and manages 40+ employees, creating a best-in-class guest experience to further Torch & Crown’s commercial goals across all our divisions. This position has the potential for room for growth to oversee additional locations as the Company grows. This is a massive opportunity that will take a proactive person who is willing to do whatever it takes – and figure out what’s needed, often with little direction – to get the job done.
*Responsibilities*
*Personnel Management:*
* Lead all managers and team members in delivering a best-in-class hospitality experience to every single guest
* Ensure all personnel-related administrative duties, including payroll, are completed accurately, on time, and in accordance with company policies, procedures and regulations
* Hold regular 1-to-1s with, and provide support, guidance, and career development to, all direct reports
* Design and update training plans around steps of service, ensuring all staff is properly trained and pathways for growth and development are attainable for all
* Monitor and communicate performance of staff, via regular formal performance reviews and frequent informal feedback, to drive a high-performing team dedicated to hospitality, excellence, and achievement of business goals
* Direct hiring, supervision, development and, when necessary, termination of employees
* Assist the Executive Chef in achieving BOH labor/COGS targets and in creating a safe, energetic, and supportive work environment
* Manage team of 2+ FOH managers and all FOH hourly staff to ensure hospitality team is given complete and effective direction to perform all tasks and provide best-in-class customer service to all guests
*Operations:*
* Build and maintain an infrastructure and foundation for operational excellence through clarity of roles, goals, and resources, ensuring that all systems and processes are efficient and accessible
* Lead the FOH and BOH management teams to coordinate execution of daily restaurant operations, including events and special requests
* Be physically present on the floor during service to foster and maintain positive guest relations, anticipate and promptly provide for guests’ needs, and ensure service standards are being met consistently
* Maintain, update, and create SOPs around our core operations
* Work with Marketing team to guide marketing plans for onsite sales efforts
* Achieve COGS and Labor Cost targets, working with management teams to eliminate waste and minimize overtime expense
* Communicate with kitchen regarding pace of service, special needs, and general guest satisfaction, working to update procedures when needed
* Coordinate with brewery production team onsite to understand production needs and schedule tasks appropriately between production and hospitality teams
* Build relationships with other Torch & Crown Senior Managers to foster communication, collaboration, support, and ensure all broader business goals are met
* Uphold and enforce company food safety, food handling, and sanitation requirements to ensure the health and safety of our guests and staff
* Ensure all company policies, procedures, and operations are compliant with operational standards, federal/state/local laws, and ordinances
*Business Management & Reporting:*
* Own the hospitality business’s PnL, working with senior business leaders to create and oversee departmental budgets and track performance against revenue and specific expense targets
* Report prime costs on a weekly and monthly basis, immediately launching corrective action to ensure costs remain below targets
* Ensure labor and inventory management systems are kept 100% accurate in real time
* Analyze our sales and guest trends, identifying ways to improve our guest relationships and return rates
* Analyze profitability across our entire operation, identifying ways to cut costs or gain efficiency as we scale
* Oversee the processing of payroll. Ensure the labor cost is accurate and up to date, and all payroll operations are compliant with all labor laws
* Create and track weekly, monthly, and quarterly sales goals and KPIs at departmental and individual levels
*Qualifications*
*You have:*
* An innate love of hospitality
* Advanced knowledge of hospitality systems and processes and an ability to find the simplest solution to complex problems
* 3+ years of experience managing high-volume hospitality organizations (ideally $5mm+ annual revenue and 3,000+ covers weekly) in a GM or Operations Director role
* Advanced knowledge of Microsoft Office, POS, and ERP Systems such as R365 or Craftable
* An inquisitive personality and a drive to constantly improve processes
* Strong analytical and organizational skills and impeccable attention to detail
* Excellent written and oral communication skills
* A passion for craft beer (preferred)
* Bachelor’s degree or similar experience
