*SUMMARY:*
The Front of House Manager is responsible for managing the daily service operations of Court Street Restaurant and Coffee Shop, including the selection, development and performance of Front of House staff. In addition, they oversee the inventory and ordering of paper goods and cafe supplies, work to operate within labor and supply budgets and ensure that guests are satisfied with their experience. The Front of House Manager reports to the Director of Operations.
*Financial Reconciliation and Administration:*
The Front of House Manager must:
• Take ownership of and react as needed to all P & L statements, inventories of FOH supplies, cash variances, FOH labor costs and budgets and other financial administrative tasks as necessary to ensure profitability within their department.
• Ensure and take responsibility for the accurate daily accounting for all cash and receipts in the cash drawer and float.
• Enter and ensure accuracy of all daily sales reports and tip allocations.
• Compile weekly deposits out of all cash received within the week.
• Utilize invoice organization systems to ensure all orders placed are accurate in quality, quantity and invoiced by the vendor at the agreed upon price.
• Work with Kitchen Manager to ensure menu items are priced appropriately for their COGs.
• Take ownership of the monthly inventory count of FOH supplies and its accuracy.
*Human Resources:*
The Front of House Manager must:
• Advertise, select, hire, train, and mentor FOH staff.
• Ensure that the complete customer hospitality experience as visioned by the executive team is executed on consistently through training and personal example.
• Hold regular ‘one on one’ catch ups with FOH staff and periodic staff meetings as needed.
• Recognize staffing problem areas within the FOH and rectify (remove, retrain, repurpose employees as needed to maximize performance) in a timely and efficient manner.
• Ensure acceptable levels of Food Handlers licenses are maintained within the FOH.
• Understand daily staffing requirements proactively and schedule staff appropriately. React to staff overages in a timely and efficient manner in order to maintain FOH labor costs within budget.
• Approve all timesheets in a timely (daily or every other day) and accurate manner including managing employees who are chronically tardy or staying in excess of their shifts without prior clearance.
• Ensure that all employees represent the values and principles of TRCU Coffee LLC for customer service and adhere to the policies and procedures as set forth in HR documents, such as handbooks and policy notices
• Front of House Manager must exemplify the values of the company at all times, through personal presentation, customer service and attitude.
*Department of Health:*
The Front of House Manager must:
• Ensure and take responsibility for the management and follow up of daily cleaning within their department and define measures set in place in order to achieve and maintain an A grading at every visit.
• Create and maintain a system of checks to ensure all temperatures (hot, cold and standing) are logged and equipment is maintained as necessary to ensure appropriate operational capacity.
• Work vigorously and as often as necessary with pest control and staff to ensure minimal to no levels of infestation that would jeopardize our A grade.
• Ensure all team members are adequately informed in DOH standards and following policies for personal conduct put in place to ensure DOH regulations are being followed (i.e. wearing appropriate head and footwear, labeling and placing lids on beverages, not eating on the floor).
• Ensure that there is always an assigned Food Handler’s license holder on premises to interact with DOH inspectors.
*Operational Systems and Procedures:*
The Front of House Manager must:
• Update and maintain order guides and pars to ensure consistent stock of supplies and availability of menu items.
• Ensure adherence to staff meal and staff retail coffee policies.
• Update, maintain and ensure adherence to all policy and procedural manuals, operational checklists and systems.
• Communicate with Kitchen Manager to ensure the active, accurate and timely updating of POS, menus, delivery and website platforms including the addition of all new items, archiving of old items, and accuracy in pricing of these items.
• Maintain a list of areas/items that need attention to bring the facility into good repair. Work through this list where possible and draw to the principles attention all that require external contractors.
• Maintain a communications log to ensure accurate and timely communications throughout the day.
Range and Promotions: The Front of House Manager must:
• Work with Director of Operations and Kitchen Manager to develop and pursue all possible avenues for revenue development.
• Work with Director of Operations and Kitchen Manager to create an evolving range of seasonal products and specials throughout the year.
• Working with Director of Operations and Kitchen Manager, develop and coordinate (including communication of) specific offers for special days such as Mother’s Day, Thanksgiving etc.
Information Dissemination and communication: The Front of House Manager must:
• Ensure that all staff are updated on menu, scheduling, and procedural policies and changes.
• Ensure smooth and evolving communication with customers and patrons including placement of A-boards as well as internal communication opportunities within the shop; and
• Author and update messaging within the shop to alert customers and patrons to new and exciting menu options and offers.
• Work with Director of Operations to ensure ongoing availability of high quality photos, videos and other marketing assets for use on website, email marketing and social platforms.
*Physical Requirements:*
The employee must occasionally lift and/or move up to 50 lbs., while performing the duties of this job, the employee is required to stand for long periods of time; frequently walk, use hands and fingers, handle or feel, reach with hands and arms, talk and hear; occasionally sit, climb or balance, stoop, kneel, crouch or crawl.
