Exciting Opportunity: Sous Chef for New Latin Wine Lounge Concept
Join our new Latin wine lounge, an intimate 40-person wine bar offering a unique wine and food experience. We are seeking a motivated Sous Chef with a passion for Latin cuisine, small-plate dining, and wine pairings. The Sous Chef will work alongside our Executive Chef to oversee menu execution, ensuring that each dish meets Rosa’s (ChefScape) high standards. The ideal candidate must have a deep understanding of modern food trends, culinary innovation, and kitchen leadership.
We are looking for a motivated Sous Chef who can think quickly on their feet. An ideal candidate must possess thorough knowledge of current food trends and food preparation. The Sous Chef will work alongside our Executive Chef to help lead daily production of menu items and he / she is responsible for directing the cooks to prepare the highest quality of Rosa’s (ChefScape) standards and vision.
RESPONSIBILITIES
* Directs recipe execution and production schedules
* Monthly menu planning, station rotation and ordering
* Maintains kitchen standards of cleanliness, organization and workflow
* Keeps team on track with their production schedule
* Leads development and training of the kitchen staff
* Manage kitchen staff (scheduling, daily management and performance management)
* Creates training plans and standard operating procedures for efficiency in the kitchen
* Enforces safety guidelines and food safety standards (responsible for passing regulatory inspections)
* Ensures proper setup and breakdown of kitchen, following Rosa’s protocols and procedures
* Maintains proper storage and rotational procedures (FIFO) of house equipment and dry storage
* Support menu planning, presentation, and preparation
* Assisting in managerial and administrative tasks for the kitchen
* Seeks and welcomes feedback. Takes action to enhance personal, professional and company growth
* Highly organized with precise attention to detail
* General administrative duties:
* Orders inventory of required materials (packaging, disposables, dry goods) needed on a weekly basis
* Manages labor and kitchen costs within specified budget
* Completes monthly inventory of Rosa’s kitchen equipment and submits to the Executive Chef
* Attends weekly Operations team meetings
* Schedules and facilitates weekly kitchen team meetings
* Performs other duties as assigned
QUALIFICATIONS
* NYC Food Handlers Certification and ServSafe, or obtain within the first 30 days of employment
* Minimum 5 year experience as a Chef in medium to high volume kitchen required, Latin & Fine dining experience preferred.
* Must be keen to details and have a desire to work with high standards, efficiency and food safety.
* Effective communication and management skills; ability to take direction from supervisors and lead a team constructively.
* Ability to work in a clean, organized, and efficient manner in a high-pressure environment.
* Flexible and have a strong ability to problem solve.
* Must have excellent knife skills and proficiency in all aspects of cooking.
* Ability to work independently, proactively, and resourcefully

* Must be able to stand, bend, stretch, lift and carry heavy materials up to 50 lbs
* Floating schedule (Mon-Sun, nights & weekends)
* Available to work on-call shifts, after hours, weekends and holidays
* Ability to meet deadlines
* Bilingual (a plus!)
